APPLE & FIG BUCKWHEAT MUFFINS (VEGAN & GLUTEN FREE)
A vegan and gluten free recipe from our new supplier of figs, @garlicgirls from Mt Martha.
2 tbsp ground flax seed
1¾ cup non-dairy milk
1 tsp apple cider vinegar
1 tbsp apple sauce (flesh from approx 2 baked apples, optional)
1 tsp vanilla essence (optional)
Stir through all these WET MIX ingredients in a jug/bowl and leave to stand.
1½ cups buckwheat flour (or flour of choice)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
¼ tsp salt
4 ripe figs, mashed
4 Tbsp fig jam (or other jam of choice)
Stir through all DRY mix ingredients in a large bowl.
Stir WET ingredients into DRY ingredients until well combined. Spoon mix into silicone mould muffin trays (don't overfill each tray). Dollop 1 tsp of fig jam on top of each muffin (optional). Bake at approx 170 degrees for approx 20-30 mins (until risen and golden glow on top)
