HONEY GLAZED STRAWBERRIES ON PANCAKES WITH STRAWBERRY GOATS CURD

For a weekend breakfast, brunch or dessert treat grab a bag of Tuerong Farm’s pancake mix and this season’s sweetest strawberries.  When making the pancakes replace the milk quantity with buttermilk, or alternatively, for a cheat’s butter milk, add a tablespoon of lemon juice to milk. Then follow the packet instructions. While resting the pancake mixture prepare the glazed strawberries. For a double strawberry fix, you can puree some fruit with goat curd to dollop on top, or serve with Greek yoghurt or cream instead.

serves 4-6

Tuerong Farm pancake mix

500g strawberries

2 tablespoons honey

¼ cup orange or lime juice

1 tablespoon thyme sprigs

Strawberry curd:

½ cup goats curd

250g strawberries

Make the pancakes according to packet instructions.

To make the curd mixture: blend strawberries and curd in a small food processor until coarsely pureed.

For the warmed strawberries: remove leaves from strawberries and cut the fruit in half. Heat a non-stick fry-pan over a medium heat. Add the honey, orange juice and zest. Then add the strawberries and thyme, gently tossing for  about 2 minutes until the liquid reduces and becomes syrupy. Remove from heat. 

To serve, top the pancakes with warm strawberries, syrup and dollop over the strawberry curd.
